Healthy carbohydrates lower cortisol, which is known as your stress hormones. If your diet is too low in carbs, your body makes more cortisol to convert your muscle tissue into blood sugar. A healthy cortisol slope involves having the lowest levels of cortisol in the evening. Because of that, dinner is a good time to consume healthy carbs otherwise known as complex carbs. An unhealthy or abnormal cortisol slope increases the risk of weight gain, fatigue, moodiness, or unwanted disorders like diabetes.
